I know it's been mentioned already, but Oldboy simply can't get enough praise. That hallway fight is just amazing, especially how realistic it all looks. I swear it's like they were hitting each other for real. The music really added to the sheer awesomeness of it all, too.
I also liked pretty much every fight scene in Versus, and the kung fu sequences in Godzilla: Final Wars were cool as well. Basically you can't go wrong when Kitamura is directing.
Same thing for Jackie Chan and his many excellent battles. But my personal favorite was in this one movie whose name I can't recall. It's one of Chan's older titles, in which the final fight was between him and this old guy (or a yong guy in a wig, whichever). It was, quite simply, the longest fight I've ever seen in film, going for at least 15 minutes, and Chan's enemy pulled some amazing flips. It got so intense, that Jackie's training partner in the movie stepped in, and the two of them continued to fight the old man, ultimately overpowering him (it's also the one time I've seen someone give Jackie a hand in taking down a single enemy). I wish I could remember the name. I think it had "Blood" somewhere in the title.
It was also the only Chan movie I've seen to feature nudity. Bouncy nudity.
