You can also use DVD Shrink to split the disc if it's something on which you really don't want to sacrifice quality. I do this with movies like LotR, The Fountain, Mirrormask, etc. where visual/aesthetic elements are a large part of the film's appeal. It depends on if you care more about convenience (e.g. keeping movies to a single disc, not having to pay for more discs) or picture quality.

Also, you might be able to pare it down a bit by snipping out the extras and just keeping the main feature. I do this a lot and it's actually quite nice, as I can remove the menus too and set the start point to the opening credits of the movie itself, past all the stupid studio logos, "DIE IN HELL U PIR8!!!111!!omg!!11!!!shift-one!!111!!" threats, advertisements and other crap. Just pop it in and the movie starts straight away.

DVD Shrink can do all of this under the "re-author" tab.
