A new version of Melty Blood has been announced, with infinite guarding finally fixed, two new characters, and more stuff. Comes out in 2008.
*edit* also my choice in characters are Nanaya and Shiki Tohno.

There is an online patch, but it doesn't work very well/is really hard to use sometimes.
Also, while highlighting Chaos, press start. There's nowhere I can't reach. WALK WITH THE DREAMERS,

No idea. However, there are fan-based fighting games based of off Fate out there.
