I've always liked the fight between Darth Vader and Luke from Return of the Jedi. Not as much action as say, Obi-Wan vs Anakin in Revenge on the Sith, but the dialogue between them is what makes it so good. The way he's like "Well if I can't turn you, I'll just go after your sister." to make Luke flip out was really cool. And when Luke cuts off Vader's hand, like Vader did to him... Poor guy just can't keep hands.
As for gunfights, the one from The Boondock Saints between The Saints and Rocco and El Ducce (sp?) was pretty awesome. That whole scene with Willem Dafoe describing it and acting it out alongside them was really cool. The Lobby Scene in The Matrix is overrated. Jam it back in, in the dark.
