You won't find any easy explanation for all these options. You have to read a lot to understand what the options do:

And yes, you will have to find another forum/mailing list for that type of question. Probably you also wanna read some guides on ASP/AVC encoding with different tools. Most of them give advance on activating/deactivating specific options based on the input material (encoding action movies, animes, movies with slow action, etc.) Doom9 is a nice place to ask such questions, they also host a multitude of guides. Jam it back in, in the dark.
