Use DOSBox or DOSEMU. I usually use DOSBox (which is a full emulator, compatiblity is quite high though). If you're planning to play some more CPU intense games you might want to try DOSEMU, which virtualizes most of the hardware (like the CPU).

Another option is using VDMSound, ScummVM (if the game is supported) or VMWare with a FreeDOS setup.
