I'd recommend Final Fantasy VIII, definitely. I'm a FFVIII fanboy, not a FFVII one; that game just didn't enrapture me as much as the 8th. FFVIII: better graphics, better soundtrack and better storyline IMO (holds up flame shield).
..But if I had to recommend any FF game I'd say Final Fantasy I. Play it now; go back to the series' amazing roots. Most amazing jew boots
