Two CDs I can think of would be Onimusha 2 Orchestra Album and Shenmue Orchestra Version. Although they both do have some more "upbeat" battle themes on them, I don't know if that's a no-no for you. But they're nowhere near as cheesy as FF8 FLWV's Don't Be Afraid or Man with a Machine Gun. Symphony Ys or Symphony Sorcerian may work as well. And if you don't mind showing off a slightly synthetic -- but very well textured -- orchestra, there's always the sublimely dynamic soundtrack of The Dig.
Although, I'd have to say I agree more strongly with Dragon Quest music if you're going for a really true classical feel. I love the Brass Quintet album, and the String Quartet would work equally well, I'm sure, as well as any of the orchestral suites.
