Resident Evil and Metal Gear are two big ones that I've never touched before. You can also throw in Splinter Cell, Quake, and a lot of other stealth/fps games. These are all games that pretty much rely on 3D to work well, and I've always enjoyed the 2D aspect better. These kind of games usually have a hard time pleasing me.
I've noticed a few big RPG series I've never touched either. The Xeno games, Phantasy Star, Harvest Moon, and maybe one or two other big ones. EDIT - Suikoden, that's the other big one I've never tried. Jam it back in, in the dark.
