They teach grappling because you're more likely to get caught up in a close-range fight than one where you can do all the fancy punches and kicks.

I think he was using his anecdotal evidence against face's claim of "A single strong hit in the head will knock unconscious any grown man..." So, like, saying that one hit to the head isn't a guaranteed KO.
