I think I have about two. My all time favorite is Operation Flashpoint: Cold War Crisis. The sheer realism and feasibility(although sometimes it got crazy) was amazing. The amount of freedom the player is confronted with is staggering. The islands total some 400 sq km of constantly available land to roam. Mission in front of you? Wanna find a broken truck instead? If they are going to make good simulations they need to set more of them in the cold war like they did with OFP.
The second is Jane's USAF. The sheer variety of planes available and the diversity of the campaigns(Vietnam, to Desert Storm, to a scenario involving the newer F-22A) made it one of the best simulations I've played. LOMAC is good, so is Falcon 4.0; USAF was just amazing though. Plus, the F-4 is just sexy.
Honorable mentions: Rise of Nations, Half Life, and Rainbow Six.
