I'll third the Arc the Lad Piano Album. The original songs weren't anything impressive, but they really turned out well after the arrangement. And I'm generally not a huge fan of piano albums.
I also liked the Saga Frontier II Piano Pieces, although it is not exclusively piano and it might be more because I liked the original music a lot. EDIT: Dammit, when I posted I was second! Oh well, get the Arc the Lad Piano Album. Jam it back in, in the dark.
