The Dynasty Warriors Serires has always had some cutscenes that had good fighting in it, most notably the opening to Dynasty Warriors 5. Watching Zhao Yun make an entire army his personal bitch was quite amusing, to say the least.
How about Magna Carta? Watching Calintz do his crazy-looking warping and kicking ass, can't exactly remember where that was, but that was a pretty cool scene too. Shinobi also had some pretty cool fight scenes. And who can go wrong with Devil May Cry 3. Has arguably the best overall fight scenes in a game. Jam it back in, in the dark.
