I recommend the soundtracks to Planetes, Berserk and Noir. There's some great music in all three of those shows; all have unique and original tracks. Oh and .hack//sign had a great soundtrack too, pity the show sucked. Also, as others have listed, anything by Taku Iwasaki: Kenshin OVAs, Now and Then Here and There. Yoko Kanno stuff is great too, so Escaflowne, Cowboy Bebop, GITs etc all have awesome soundtracks. I'm liking the music in Mushishi too so give that a try.
