diced is the way to go. Again this is my field of work.
when you make anything smaller or thinner it will be compressed [redefined] therefore the flavor is jammed in. Like let's say cookies, it would taste sweeter if you bashed it up and eat the crumbs rather than the round intact cookie. Jam it back in, in the dark.
