Right now, I think that Tsuyoshi Sekito's "Final Battle with Saruin" from Romancing SaGa - Minstrel Song is the greatest and most addictive (final) boss music I've ever heard. I just can't have enough of it.

Another one I like is "Fighting of the Spirit" by Motoi Sakuraba, for Tales of Phantasia. I've never played the game, but I assume it's a boss theme. It's so good that Sakuraba himself encored it in Tales of Symphonia
