Jumbo Boiled Raisin Cookies
2 cups raisins 1 cup water 1 cup butter 2 cups sugar 3 eggs 1 tsp. vanilla 4 cups flour 1 tsp. baking powder 1 tsp. baking soda 2 tsp. salt 1 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. allspice This is the basic recipe. I personally use some extra spices. Clove, cinnamon, and a bit of orange blossom water, but this is the base. Feel free to run from here. Boil raisins in water for 5 mins and set aside to cool. Cream butter, sugar, eggs and vanilla. Add cooled raisins (IMPORTANT. INCLUDING THE JUICE/WATER.) Sift together all the dry ingredients. Add to raisin mixture and mix well. Drop by tspful onto cookie sheet. Bake at 375 for 12 to 15 minutes. Makes a lot. Enjoy.  Jam it back in, in the dark.
