I don't mind both kinds. It usually depends on what sort of flavor and texture I'm looking for.
The primary difference between American and Chinese jerkies is that the latter is usually cooked (to make them more tender) before being flavored and dried whereas the former is marinated and dried raw, thus giving it the slightly tougher consistency. Jam it back in, in the dark. |
