Luca Blight, Suikoden II - It takes three parties of six to take this guy down. And it isn't easy if your parties are of average power. And after taking a pounding from him, he is still alive and on his way to escaping before he gets taken down by a group of archers.
Odin, FFVIII - This fight is only challenging if you allow it to be. First of all, you have a time limit. Sure, there is plenty of time to annihilate him, and he doesn't ever actually attack. The fun lies in your attempt to draw as many Triple spells from him as you can, and defeat him within the time limit, because at the end of your 20 minutes {the counter begins the moment you enter his dungeon}, he will kill the party if you haven't killed him first. Drawing 100 Triples each on three characters is tough.

I didn't say I wouldn't go fishin' with the man.
All I'm sayin' is, if he comes near me, I'll put him in the wall.
