Suikoden V, Dragon Quest VIII, Shadow Hearts, Shadow Hearts: Covenant, Star Ocean: Til the End of Time {which is a greatest hits title I think}, Knights of the Old Republic {on PC}, Knights of the Old Republic II: Sith Lords {on PC}, Fable: The Lost Chapters {on PC}. These titles range from decent to excellent, so no doubt you will find one or more of them enjoyable.

It's hard to say really. Shadow Hearts: Covenant is a solid game in almost every way, I got a lot of enjoyment out of Star Ocean and put probably 120+ hours into it, both Knights of the Old Republic games are very good and have a great deal of replay value, especially for people who are big Star Wars fans. It would be a toss-up between those titles I guess, though you can probably get the first Knights of the Old Republic for really cheap online, and I would play it before playing the sequel.
