Kimchi is essencially chinese cabbages pickled in spices and fremented/pickled fish/squid guts. The only reason why it would be just sour is that it was just pickled in vinegar with spices -- so yeah... it's not real kimchi.

Or that, the sourness just comes from Kimchi going bad (not enough spices).
