I'd also suggest Inon Zur and Michael Hoenig, who are mainly found in the form of gamerips these days--their work for sword-and-sorcery games often has that vibe.

On the Japanese side, there's tons of ambiance to be found in the Silent Hill series, though it's a lot more industrial and off-kilter than Myst. Motoi Sakuraba can whip up a good atmospheric theme or two as well, when he's not busy rehashing his Battle Theme
