Star Wars: Knights of the Old Republic, Jedi Academy, and Rogue Squadron all stand out quite well in my mind. KotOR for the immersive-ness into the world, Jedi Academy for the multiplayer and Lightsaber-weilding, and Rogue Squadron was just awesome. Especially Hoth.
