I have a friend who makes a dish she calls "Huevos Divorciados". (Divorced Eggs) She makes 2 eggs over easy side by side but "divorces" them on the pan with the spatula and using Tapatio sauce, lemon and a bit of fried beans to put a "wall" between them. It was more fun watching her prepare them too, but I can't say that it wasn't a strange little practice.
Of course, I also can't say that they're some of the best eggs I've ever had in my life. Jam it back in, in the dark. |
