Basically I'd like to kill all unnecessary processes during the times that I'm working on MIDI sequencing. I've got a GB of RAM, but I've loaded a ton of samples into the sequencer that slows everything to a crawl, and playback is choppier than hell.

Will killing processes in the Task Manager help free up some resources so things aren't so unbearable? And if I end a lot of stuff, will it make a noticeable difference?

Here are a couple screencaps with info. I am not aware of how crucial several processes/startup items are, so I am reluctant to end them.

Typically, on any computer, 1/2 the stuff in the start-up doesn't need to be there. Just looking at yours, there are a pile that don't need to be there. Easiest thing is to just copy the file name (such as msgr2.exe) and do a search on Google. There are numerous sites that will identify the file/program and list how important it is on start-up.
