You mean completely remove a staff from the score? That's easy. Layout > Instruments and Staves (shortcut key:I). It'll bring up a dialog. On the right hand side, select the track you want deleted and then click 'Delete from Score.'
As for changing the title, doubleclick on the current title. A cursor will appear. Edit at whim.
