I like to add a mayo/brown mustard sauce on salmon fillets, sprinkle some various herbs and shove them in the oven for 10-15 minutes until they're ready.
They come out tender and absolutely delicious. If you like Salmon, give "Tilapia" a try. It's not that common but it's quite delicious. Jam it back in, in the dark.
