Anything, seriously ANYTHING by Yuki Kajiura: Noir, Tsubasa Chronicle, Le Portrait de Petite Cossette, Mai-HiME, Mai-Otome. Lots of female chorus singing and generally epic, melancholic and atmospheric stuff.
Also, Toshiyuki Omori's soundtrack for Shingetsutan Tsukihime is one of my all time favourites for similar reasons (except the female chorus). Jam it back in, in the dark.  Anime lover, gamer, and dreamer
