Sometimes I'll start tapping my left foot really quickly if I'm getting nervous during an RPG boss battle, but other than tensing up I don't usually do anything.
There are times when I get a bit carried away though. My most embarassing was in the college library last year while playing Castlevania: Dawn of Sorrow. During my break between classes that semester I played my DS in the back corner, where I was mostly hidden but still visible to about three desks and a table. They were typically empty aside from the odd person back there studying.
I'd just finished exploring the underwater area with Homonculi enemies and such, and I was almost completely dead with about 15 HP remaining. I couldn't be hit even once, so I was extremely tensed and fighting every enemy with as much caution as possible. One hallway between me and a save point, and I broke out into a run, completely forgetting that the cieling in that room had falling traps. When the first trap fell I let out a loud "GAH!" and jumped. Though I'd dodged the spike trap, there was a guy sitting at one of those tables giving me the funniest stare ever.
Jam it back in, in the dark.
