How the hell do you get to level 700. I'm only at level 19 with like 19 hours of game play or so. Don't tell me you've been playing this game for over 5000 hours.
Simple. You find one of the stages where you can kill a whole bunch of people in one shot, like the map in chapter 9, or the third map of Cave of Ordeals, and you keep right on hitting it until you fail to gain a level by doing so. You can increase the yield by building up a statistician for your character, which will multiply earned experience to a maximum of +300% (Exp x4), and you can also pass 'stronger enemies' bills for more experience yield per monster.

What is the highest HP you can get, and highest level? Level 9999?
Not a clue about the HP, but the highest level is indeed 9999. Of course if you transmigrate frequently and max your 'stored levels' you'll gain bonus points that will enable you to boost your base stats even a little beyond those of level 9999.

That's for the serious grinders though. I've never gone that far.

Jam it back in, in the dark.

Those numbers are so huge it's almost disgusting! Imagine how much it would cost to revive that dead Laharl, if perhaps there's a death spell in this game.
There will come a point at which money becomes so completely irrelevant to your party, I assure you of this. You'll have more than you could ever spend.
Any pitfalls to avoid in this game? I've downloaded a couple FAQs but character building seems daunting, what with having to level up certain characters at certain times in certain orders to get somewhere. Without a FAQ, I'm very curious how anyone would know to do that? This game seems to huge for that much trial & error...
Honestly I never noticed that it mattered which character you were levelling up. If you just level one character all the way through the game, you could probably still complete it.

Additional Spam:
Actually I think it's a guy.
It's a magic knight class, isn't it? They seem to be female. Looking closely you'll even notice they appear to have been drawn with small breasts.

Sometimes I see that Delicious has these special healing spells, albeit its a lowly 1st level healing spell, but sometimes it disappears and I'm stuck with fire spells and braveheart. What's going on? Do I have to use it (healing) up to level one for it to stick permanently?
That's right. When they are standing together, it appears at skill level 0. If you use it enough to boost it to skill level 1, the character can keep it. I'd probably have to partly agree with Lix though. It's a lot of work to get those kind of spells to a decent level. Not completely useless, but be prepared to invest the time if you want to make them decent.

Also, I get my healers to heal everyone even if they don't really need it, this is to boost up the learning, because if they don't use their special skills, it doesn't grow.
It sure does grow slowly, doesn't it? In Disgaea 2 they introduced a specialist that could make skill experience grow faster, but in this game we are stuck with the base rate.

There's nowhere I can't reach.
