All three final boss themes in FFVIII are awesome. Fact. All are great on their own, and they're even better when combined. I prefer them to OWA.
As for regular boss music, I just love FFVII's Those Who Fight Further. Really rockin' piece of music. The Black Mages version of the tune is, in my opinion, amazing. FFVI's The Decisive Battle is good too. If mini-boss fights count, I am digging the one used in LoZ: Wind Waker. P.S. I think FFXI has an awesome battle theme : / Jam it back in, in the dark.
