Just a general question though, how hard and how long does it typically take to create something of about this length?

That depends on how good you are and which hard/soft you are using to compose a mix. This one took me nearly a month, not because it was hard to do, it's because I didn't have much time on it. Basically, I spend a month or a half on most of my mixes.
